Chicken florentine soup also makes a great freezer meal. Combine the ingredients except for the potatoes, carrots, cream cheese, cheese and spinach. Place the soup mix in an airtight freezer safe container. Store for 4-6 months.
I made this last night and everyone had seconds! I used grilled turkey that was left over instead of rotisserie chicken, and it was great, so keep this in mind for after Thanksgiving too. I had some orange sweet bell peppers and thew those in too. I love a versatile soup like this.
Chicken Florentine Soup Recipe Olive Garden
Heat the olive oil in a large heavy-bottomed soup pot or Dutch oven over medium heat. Add the onion, dried basil, dried oregano, and crushed red pepper flakes, to taste; mix well and cook, stirring occasionally, for 3-4 minutes. Add the garlic then cook, stirring constantly, for 1 minute. Slowly add the vegetable (or chicken) broth and the canned tomatoes. Stir, crushing the tomatoes with the back of your spoon, until well combined. Reduce heat to medium-low, cover with a lid, and cook, stirring occasionally, for 30-45 minutes, or until the veggies are very tender.
2. In the meanwhile, pat the chicken breast dry with paper towels. Sprinkle each breast liberally with salt and pepper on all sides. Dredge them in the flour, and shake off any excess. In a large skillet, heat the olive oil over medium heat until it is shimmering. Add the chicken breasts to the pan in a single layer. Pan-fry them until they are golden-brown on both sides and cooked through, about 5 minutes per side. Transfer them to a plate while you prepare the rest of the dish.
I made this recipe last week for the first time. I substituted a few things to make it a bit healthier: butter with avocado oil, milk with soy milk, chicken broth with bone broth, and store-bought linguine with homemade wholewheat spaghetti.
My husband (who does not eat spinach) and I went to wedding and one of the dishes served was a chicken florentine which he enjoyed so I thought I would attempt making. I found your recipe and it was absolutely delicious and easy to make. Guess who will eat spinach now! Well at least using this tasty recipe!. I also liked the fact that it did not require heavy cream. I was looking for healthy so I did not add pasta. Any idea of calories?
Hi Natasha. I was looking for a pork tenderloin recipe. Found your website and I have already printed four recipes to try as well as subscribed. Love this chicken florentine, however my son hates mushrooms. Can you suggest any other veggie to go with this recipe?

Stir gnocchi into the simmering soup; cook, stirring occasionally, until tender, about 5 minutes. Meanwhile, using 2 forks, shred the chicken into bite-size pieces. Return the shredded chicken to the pot. Add spinach; stir until the spinach is wilted, about 1 minute.
This soup was a hit with the family! Followed the recipe exactly as written, but when I warmed up the leftovers I added a tiny pinch of nutmeg and I think that was a nice addition (I watch too much Rachel Ray... LOL). I could not find refrigerated gnocchi, so I did use packaged and they seemed to work just fine.
When will this winter be over already? It seems that every year I forget how cold the Midwest gets, and every year I wonder why we put up with it. At least warming soups and casseroles do help. This creamy chicken florentine soup recipe has been a recent favorite.
Next, the remaining ingredients go into the chicken florentine soup. These include chicken broth, cream, shredded chicken, sea salt, black pepper, and of course, spinach. Spinach is basically the highlight of Florentine-style recipes.
I usually prepare the shredded chicken in a pressure cooker. Often times I make it in bulk and thaw some from the freezer for the soup. You can use any method you like. Even cubed chicken or pieces of rotisserie chicken will work great, too.
Made this tonight since it has been raining. I used chicken bone broth concentrate so was able to decide how strong I wanted it per cup. Also used frozen spinach (heated & drained, before adding). I seasoned chicken breasts with Italian seasonings and baked it before shredding it. Had to warn my family since they are lactose intolerant, but it still was a great hit. And I have leftovers for lunch this week. Note: first time cooking with artichoke hearts so was a bit concerned. This recipe made it so easy.
This dish really hit the spot as the weather turns cooler. I made a couple of small tweaks. I started with avocado oil instead of butter and added a pinch of nutmeg since I add it to most cooked, leafy green dishes, especially the ones with cream. I love soup, and this recipe is a hit.
Great recipe! Substituted andouille sausage and beef broth for the shredded chicken and chicken broth. Then used Fairfield (lactose free) milk and butter (mixed together) instead of cream. Came out awesome. Definitely will be making again.
My family loved this soup! I added an 8 oz package of cream cheese and some shredded parmesan cheese to the recipe to make it more creamier! Even made a double batch and it went quickly! Did not use artichokes, but know they would be good in it!
The really difficult choice comes between the Chicken & Gnocchi soup and the Zuppa Toscana. Both are cream-based soups. The Chicken & Gnocchi is a creamy soup filled with chicken and soft tender gnocchi. While the Zuppa Toscana has Italian sausage, potatoes, and fresh potatoes.

Add in chicken breasts (if using rotisserie chicken wait to add at the end) and bring soup to a boil, reduce heat to medium-low, cover and allow to simmer until chicken is cooked through (it should register 165 in center), about 8 - 12 minutes.Meanwhile, while chicken is cooking, melt butter in medium saucepan over medium heat. Add flour, cook and stir constantly 1 minute. While whisking vigorously pour in milk then continue to whisk vigorously to smooth any lumps. Season with salt and pepper to taste. While whisking constantly, cook until mixture thickens and lightly boils. Stir in cream, remove from heat.Once chicken in soup has cooked through remove chicken from soup and allow chicken to rest 5 minutes then dice or shred into pieces. If veggies aren't nearly soft let that soup simmer a few minutes longer before adding gnocchi. Add gnocchi to broth mixture, cover and simmer for recommend time directed on package, about 5 minutes. Reduce to low heat. Stir milk mixture into broth mixture, then add in cooked chicken (shredded rotisserie or cooked chicken breasts) and spinach. Cook until spinach wilts, about 1 minute.Serve warm with Romano cheese if desired.NotesUse fresh spinach for best results, skip the frozen kind here. It will turn out mushy.
Pasta or cooked rice would also be delicious in this soup in place of gnocchi.
Cooked Italian sausage would be a good substitute for the chicken.
Makes about 9 cups.
